The Perfection of Pulled Pork

I just wanted to start a fun, tasty topic about object I love: pulled pork! That luscious, fall-apart pig is always just right, whether it's slow-cured in the backyard, stewed all day in a Crock-Pot, or roasted in the oven until it is soft.

I proved something new over the evening: I marinated the pork accept overnight in a mix of apple cider vinegar, smoky paprika, garlic, and a little amber sugar. I smoked it low and slow for over eight hours, then I added a homemade Carolina-style vinegar sauce to end it off. What happened? It's like magic. We put it on brioche buns with pickles and zesty coleslaw on the side. Let's just say there wasn't a much left over!
