once again I need your expert advice. We would like to know if there is a reasonable substitute for snoek fish. Snoek is unavailable in Australia, and we sure miss that unique salty smokey flavour.

I don't know in what part of Assie you live, but here in Victoria snoek IS available! Just ask a good fishmonger for "barracouta", because that is what they call snoek here. Hope that helps!
