I'm looking for a long-lost recipe that I first made about 15 years ago! I can still taste it now! I've tried to come up with my own version, tweaking it here and there, with no luck. I got the recipe out of Your Family Magazine. It was called Chicken Mandalay.
Basically, you browned your chicken pieces and placed in a baking dish. Now this is where I get lost!) The sauce cosists of apricot jam, soy sauce, chutney, curry poder, vinegar and sugar, and more! Poured over the chicken and baked in oven. The chicken came out with a crispy, spicy, skin with a delicious sauce to serve over rice. It was just delicious! If anyone has that recipe or anything similar PLEASE let me know.
Chicken Mandalay
3 whole boneless skinless chicken breasts, cubed
4 tablespoons flour
oil
2 teaspoons chicken bouillon powder, dissolved in
1/2 cup water
1 tablespoon brown sugar
2-3 teaspoons curry powder, more to taste
1/2 teaspoon salt
2 tablespoons lemon juice
2 tablespoons soy sauce
2 tablespoons cornstarch, dissoved in
1/4 cup water
1 medium onion, chopped
1 (8 ounces) can water chestnuts, drained
1 (10 ounces) can apricots, with juice
1. Shake chicken in flour and brown in oil.
2. Set in a casserole dish.
3. In a bowl, combine remaining ingredients and pour over chicken.
4. Cover and cook at 350 degrees for 1 hour.
